Last evening we couldn’t face planning meals for the whole week ahead, so we just chose for Thursday and Friday to buy us a little more time to research. Once again, I was held back at SML, so it was an emergency dash around the supermarket on the way home to pick up the requisite ingredients.

As Joe/Frank said “this is about as greek as me”, definitely had more of an italian vibe, but it was really excellent. We all worked together to get the prep done quickly and the times given were pretty close – probably needed about 5min more in the oven than the specified 10min. The supermarket had no fresh oregano(!), so we subbed with some pre-mushed and some dried.
