Found this recipe for mango, coconut and yoghurt ice blocks when browsing the the excellent smh andriod / iphone app a couple of weeks ago on a Saturday morning and immediately saved it to my favourites. I’m a big fan of frozen yoghurt, so was keen to give this a try.

Compared to all the paletas I’ve been making, this process was quite tedious and if I make this again, there are definitely parts I’d simplify (for example, it was ridiculously messy to chop one of the mangoes into tiny chunks, next time I’ll just puree both).

Coconut paletas are still the one, true icy block in ThePalace(OfLove), but this was a nice, lighter (and probably not half so en-fattening) change which I’ll probably give another bash next summer.
