It truly was one of those time-sink weekends where, by the end of it you wonder what on earth you have spent your time doing.
We got to Sunday evening and an “oh noes, we’ve planned nothing for dinner!” – which as you all know is practically unheard of for us!
Burritos – always a good emergency meal. We generally have diced pork in the freezer (for Don to mince in the food processor); burrito mix, tortillas and cans of mexe and refried beans in the cupboard (yay for Old El Paso!); and tons of salsa and green leaves in the fridge.
From then on it is pretty mindless, completely inauthentic, but excellent comfort food.
