Another very firm family fave, from the fabulous Brigitte Hafner.

Paella with chicken. Don was still working at the SaltMinesLimited when we first made this – he dashed out at lunch to, the now sadly closed, Torres Deli to pick up a paella pan and the most wonderful dried, hot chorizo (which we’ve sadly never been able to find elsewhere).

It is really marvellous and quite simple (if you make the sofrito in advance, you can knock this over in no time) – definitely recommend giving it a bash!
