PINK (marshmallow squares)
Base
6 weetbix – crushed (or equivalent)
2 cups self raising flour
1.5 cups brown sugar
2 cups coconut
250g butter
combine dry ingredients
melt butter and mix with dry ingredients
press into lined (foil or greaseproof paper) lamington tin
bake for 20 minutes at 200 C (350 F)
let cool and apply topping of choice
Marshmallow Topping
2 cups sugar
1.5 cups COLD water (the gelatine will go spooty if you add it to hot water)
2 dessertspoons gelatine (5 teaspoons)
vanilla
colouring (pink of course)
boil together for 3 minutes
let cool
grab a good book
beat with electric beater for 30-60 minutes until thick and marshmallowy (10min if you have good beaters like the Sunbeam Beatermix1)
pour onto base
sprinkle with coconut (or some sort of light toppingy thing)
refrigerate for a while (until the marshmallow sets)
Note: it is very hard to cut into squares – you need a good big knife.
